The story began in 1988 when the unit developed a mini dairy to carry out experiments under controlled conditions, supporting the research conducted within the unit.

Ranging from 200-gram cheeses to 10-kg cheeses, this tool has continually evolved since its inception to study the factors influencing cheese quality across both traditional and industrial sectors.

Now recognized as a "Bourgogne-Franche-Comté Research Platform," our mini dairy has grown into a full-fledged facility. In collaboration with the scientific community, industry stakeholders, and businesses, it plays a key role in adapting traditional expertise and driving innovation.
