Enhancing the Value of Organic Milk

Episode 4: Showcasing the Distinctive Qualities and Uniqueness of Organic Milk – BIOSYLF Project (2021/2022)

Organic milk is widely available in the dairy market but is far less common in its processed form, such as cheese. To add value and highlight grazing-based farming practices, a group of five farms from the Western Vosges plains embarked on a cheese production initiative.
The BIOSYLF project (2021–2022), funded by the interdisciplinary research program INRAE Métabio, aimed to assess the suitability of this milk for cheese production and to identify cheese-making technologies tailored to its unique characteristics, ensuring high-quality cheeses.
