Knowledge transfer on raw milk

Kickoff of the ASSIMILAIC Project: raw milk and microbial biodiversity

An integrated approach to preserving microbial biodiversity while ensuring both the organoleptic quality and safety of products derived from raw milk processing.

The ASSIMILAIC project (trAnSfert de la bIodiverSIté MIcrobienne du LAIt Cru), led by the The Conseil National des Appellations d’Origine Laitières (CNAOL), or National Council for Dairy Designations of Origin and coordinated by the Institut de l’Élevage, was officially launched on June 1, 2024.

This initiative aims to support French dairy industries that prioritize the use of raw milk in cheese production, balancing stringent sanitary requirements with the preservation of beneficial microflora.

The key objectives of ASSIMILAIC are to:

  • unite stakeholders across the French raw milk sector and assist them in adopting best practices;
  • develop training programs dedicated to understanding and managing microbial ecosystems;
  • promote awareness of raw milk-related best practices among all actors in the sector.

The project’s ultimate goal is to implement a comprehensive "One Health" approach, ensuring effective management of microbial ecosystems from the soil to the finished product.

ASSIMILAIC is funded by the Ministry of Agriculture, Food Sovereignty, and Forestry (via the CASDAR "Démultiplication" program) and supported by three dairy interprofessional organizations: CNIEL, ANICAP, and France Brebis Laitière.
